The De Jelin stand and its products proved highly successful during this outstanding professional event. Our many visitors could discover our new induction-heated hot plate line in flat surface and WOK versions. Similarly, our Attitude Steamer could be shown in these various applications.
The demonstrations made by our culinary adviser - François CRUAUD, President of the French Association of Culinary Advisers - highlighted the outstanding capacities of our hot plates in a real application. Throughout the show, François Cruaud demonstrated the mastery of his art in the preparation of very delicate dishes, such as fillets of foie gras "frozen in this case" using a new association : - the WOK to "seal" and "brown" as desired each side in less than 21 seconds each and then the "Attitude" Steamer to terminate the cooking in a "gentle" phase up to 55°C. This innovative manner to prepare such a delicate food was heralded with success because two hours later the slices of foie gras were served to restauranteurs – visitors who were astonished by how well the pieces were preserved after such a long time. So, no raw material was lost.
The steamer once again shows how precious an aid it is in the preparation of plates in the famous restaurant market. Its "KEEPING WARM" function is confirmed as an unavoidable ally of each great Chef to offset long preparations by keeping them for a long moment, if necessary, at the right temperature without changing the initial cooking’s condition, the food, ready to be placed on serving dishes at the last moment.
Hoteliers could view the BUFFET function of the Attitude cooker which, with its many possibilities, is an asset in BREAKFAST presentations, where even soft boiled eggs can be prepared on the spot (15 or more at a time) and kept ready for consuming by customers without the need to wait before the buffet.
